strawberry lemonade cookies + a special gift

today I am OVERWHELMED with feeling loved.you see, I have this friend who I have admired for a couple years now.I've talked about her before,but she's the kind of friend that loves Jesus, is super creative, and a really good housewife/mom/sister + friend.yeah, she's that one. :)well, today this friend gifted me a treasure.to many, it doesn't seem like it should be that big of a deal,but to me...it is...my very own recipe binder.recipe bookI know some of you just either laughed audibly out loud, or you checked out and scrolled down for the recipe...BUT, you see it's a treasure because of what it means to me.I, not like this friend, am not the best of housewives...I have dust bunnies that I'm fairly certain have been in my corners since 1998,I struggle to keep ahead of laundry,I often wonder what in the heck I'm going to make for dinner because, oh yeah!, it is my job,yup, I'm still a MAJOR housewife work in progress.don't get me wrong, I'm trying...it just doesn't come naturally to me.rewind back to about twelve years ago when my kids were really small...I started clipping coupons, and organizing recipes my mom + mother-in-law had given meand was trying to meal plan with the phrase:"failing to plan is planning to fail."well, it's twelve years later and this mantra is STILL a goal of mine, not a realization.THIS binder is the binder I SO wanted to have twelve years ago...it symbolizes a wife who cooks,it's a place holder for special handwritten memories from my mom + mother-in-law that I can hand down to mad,it means I'm trying to be a mom who takes time to care about what goes inside her kids,it means I'm one step closer to being a woman who:"..is clothed with strength and dignity, and can laugh without fear of the future..."recipe book3recipe book5recipe book7so you see, this binder is definitely a new treasure for me.and even more so, because now I have a new memory attached to the dear friend who made it for me...thank you, emily. :)so it should go without saying that now I MUST fill my spiffy new recipe binder!what better way to start than with

STRAWBERRY LEMONADE COOKIES

strawberry lemonade cookies2light, refreshing and PERFECT for the spring!I was struggling with finding flavors that overwhelmed the flavors of almond/coconut and these did just that!enjoy, THM-er's!STRAWBERRY LEMONADE COOKIES easy print!

STRAWBERRY LEMONADE COOKIES

½ cp Coconut Flour¼ cp Almond Flour¼ cp Cashew Flour (you can find at trader joe’s!)¼ cp Oat Flour½ cp Just Like Sugar4 tsp Baking Powder½ tsp Salt¾ cp Melted Butter4 Large Eggs½ tsp Strawberries + Cream Flavor Concentrate (www.CapellaFlavors.com)Zest + Juice of One Lemon1 cp quartered Fresh StrawberriesLemonade Glaze¼ cp Powdered Z-Sweet Natural SweetenerZest + Juice of One Lemon1-2 T of Heavy CreamStrawberry Drizzle4 Fresh Strawberries1 tsp Just Like SugarPreheat oven to 400 degree’s F and spritz a cookie sheet with cooking spray.In a large mixing bowl mix the dry ingredients to the cookies. Mix in the butter, eggs, strawberries+cream flavor concentrate, and the zest/juice of the lemon. Mix well. Fold in the quartered strawberries.Drop by spoonfuls (I use my 2T cookie scoop) onto the prepared pan. (I got a dozen cookies total)Bake 12-14 minutes, until firm to the touch and the edges are lightly browned.Cool in pan for 5 minutes then transfer to a cooling rack.In a separate bowl, mix the lemonade glaze. While the cookies are still warm, drizzle the glaze over the cookies.In a food processor, mix the Strawberry Drizzle. Again, while the cookies are still warm, drizzle the strawberry drizzle over the cookies.strawberry lemonade cookies
