I know some of you have joined me on this THM journey of mine...(if you still haven't heard of THM...read about it...it's changing my outlook on food!)but today I have to give a little love to the woman who inspired me and continues to inspire me in this journey of mine to a better jen...
my mom.
she has always been an amazing woman in the kitchen!it's more than 90% of the reason why I love to bake so much!but the thing I love about her lately is her ability to take a challenge, i.e. learning to bake/cook with unfamiliar ingredients from THMand make UNBELIEVABLE comfort food that even I, with my picky palate, LOVE!yes, my mom is extraordinary and I am SO thankful and proud that I get to call her MY mom!this week in Arizona has been warm...borderline HOT!I know that for most of you across the country, this is not the case in your frozen tundra's!(even though I was born and raised in the mid-west, I fully admit that I am a weeny when it comes to the cold now!)because it was so warm and because of that darned Carl's Jr. commercial bragging about it's

my mom headed off to the kitchen to create theseAMAZING-CAN'T-TELL-THEY'RE-GOOD-FOR-YOU-KID-APPROVED ice cream sandwiches!seriously, they're amazing.soft cinnamon-y cookies...creamy ice-cream...yup, take THAT Carl's Jr.! :)so, once it thaws out in your area...try these!they're amazing.oh, and did I mention? so is my mom! ;)p.s. if you don't already follow her THM boards on Pinterest, you SHOULD!she pin's regularly and actually tries the recipe's in her own kitchen...FOLLOW her...you'll be glad you did! :)SNICKERDOODLE COOKIE RECIPE | easy printSNICKERDOODLE COOKIE RECIPE1 cp Almond Flour1 cp Just Like Sugar3 T Vanilla Whey Protein Powder1/2 tsp Baking Soda1/2 tsp Cream of Tartar1/2 tsp Glucommannan1 Egg1/2 tsp Vanilla1/2 cp Melted ButterCinnamon Coating:¼ cup Xylitol2 tsp Cinnamon1-2 tsp Heavy Cream*note – if you’d like chocolate ice cream sandwiches – omit the cinnamon coating and add 3 T. cocoa to your dry cookie ingredients when mixing.Preheat oven to 350°F and spritz a cookie sheet with cooking spray.In a large mixing bowl, mix together almond flour, Just Like Sugar, protein powder, baking soda, cream of tartar and glucommannan.Add melted butter, eggs, and vanilla. Mix vigorously until well combined.Scoop into walnut sized balls (I use my 2T cookie scoop) and roll in cinnamon coating.Place dough balls onto prepared baking pan…fairly well-spaced – these cookies will spread a smidge.Bake 9 to 11 minutes, until edges are lightly browned.Let cool in pan for 5 minutes.Remove then transfer to a wire rack to cool completely.Eat alone or assemble the ice cream sandwiches:She used the So Delicious No Sugar Added Vanilla Coconut Ice Cream as well as So Delicious No Sugar Added Chocolate and Mint Chip Coconut Ice Cream for the centers.Quick Tip: don’t scoop the ice cream, rather use a really sharp knife and cut directly through the ice cream container horizontally creating little, perfect-sized discs for the ice cream sandwiches
